Hyderabadi Recipe :Chicken Dum Biryani Homemade

Hyderabadi chicken biryani is one of the world famous recipes that has been delighting the people with its culinary value and its flavour 

 Hyderabadi Chicken Biryani is one of the most flavourful and delighted recipes from Hyderabad. Biryani can be made with two methods one with raw meat (chicken or Lamb with bones) and other one is Cooked meat with spices. The authentic Hyderabadi Biryani flavours comes with raw meat with hints of spices and fried onions.

The authentic taste of Biryani from Hyderabad comes with rice and fried onions. Correct amounts of all spices selecting long grain rice with raw spices makes it a good combination .

In this Hyderabadi Chicken Dum Biryani the ingredients we used is good for 6 plates of biryani (6 people).its basically divided in 5 steps follows the ingredients below

Basmati Rice 1kg Yogurt : 250Gm Cooking oil:250Gm Yellow Onions :250gm Milk : one cup Saffron : 10 sticks green cardamom :7 pieces Cinnamon sticks : 5 small sticks Bay leaf : 3 leaves black cumin seeds (shahi zeera) :2 spoons ginger garlic paste : 3 spoons lemon juice :1 big lemon salt : 2 spoons (according to taste) Red chilli powder : 3 spoons Turmeric powder :2 spoons chopped coriander and mint with 3 green chilies Soak Basmati rice for 1 hour before you start frying onions.

Step 1 :Marinate for Hyderabadi chicken Dum biryani :

In a big Pan add 1 kg of chicken rub the chicken with the ginger garlic paste to this mixture add shahi zeera (black cumin seeds),green cardamom, 3 cinnamon sticks, salt, red chilli powder ,turmeric powder, chopped cilantro, chopped mint and green chilies set it aside for 1 hour .
Step 2 :Fry 250 gm of onions finely sliced till golden brown in 250 gm oil now remove the onions once done from oil and set it aside .let the onions cool off so it get crunchy texture.
step 3 : add fried onions to step one marinade and the left over oil from frying also mixed with marinade .


Step 4 : process of Dum :In a heavy bottom pan add 4 litre water add 2 cinnamon sticks,3 bay leaves, Shahi zeera (black cumin seeds) ,4 drops of lemon juice ,salt to taste and 2 spoons of oil .oil and lemon helps to cook rice evenly .let the water boil with lid closed once boiled add 1 kg of basmati rice and cooked it for about 8 to 10 minutes once rice is cooked 70% (rice will breaks little hard ) strain the water from it and set it aside. Step 5 : Add marinated chicken from step3 to heavy bottom pan on top that marinate add rice that was set aside pour one cup of milk with saffron pieces to top off .close lid and cook it on high flame after 5 minutes you see steam coming out of pan then lower the flame to medium low and wait 20 minutes .after 20 minutes remove the lid and poke spatula to bottom of pan see it should come out dry that shows that Biryani is cooked and ready to be served.
